Ingredients:


For the grilled chicken:

- 2 boneless, skinless chicken breasts

- 2 tablespoons olive oil

- 2 tablespoons lime juice

- 2 cloves garlic, minced

- 1 teaspoon chili powder

- 1 teaspoon cumin

- 1/2 teaspoon paprika

- Salt and pepper to taste


For the burrito:

- Large flour tortillas

- Cooked white or brown rice

- Canned black beans, drained and rinsed

- Shredded lettuce

- Diced tomatoes

- Diced onions

- Sliced avocado

- Shredded cheese (such as cheddar or Monterey Jack)

- Sour cream (optional)

- Salsa (optional)

- Fresh cilantro, chopped (optional)


Instructions:


1. Prepare the grilled chicken: In a bowl, combine the olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and pepper. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the chicken to coat it evenly. Allow it to marinate in the refrigerator for at least 30 minutes or up to 4 hours.


2. Preheat the grill: Preheat your grill to medium-high heat.


3. Grill the chicken: Remove the chicken from the marinade and discard the remaining marinade. Grill the chicken breasts for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C). Cooking times may vary depending on the thickness of the chicken. Once cooked, transfer the chicken to a cutting board and let it rest for a few minutes. Then, slice or shred the chicken.


4. Assemble the burritos: Warm the flour tortillas on a griddle or in a microwave. Place a tortilla on a flat surface and layer the ingredients in the center, leaving space to fold. Start with a scoop of cooked rice, followed by black beans, grilled chicken, lettuce, tomatoes, onions, avocado slices, shredded cheese, and any optional toppings like sour cream, salsa, or cilantro.


5. Fold the burritos: Fold the sides of the tortilla inward, then fold the bottom flap up and over the filling. Roll the burrito tightly from the bottom to the top, ensuring all the ingredients are enclosed.


6. Serve and enjoy: Place the burritos on a serving platter and optionally cut them in half diagonally. Serve them immediately and enjoy!
