Kafuli Recipe:


Ingredients:

- 2 cups spinach leaves or fenugreek leaves (cleaned and finely chopped)

- 1/2 cup bhatt dal (black lentils) or gahat dal (horse gram)

- 1 onion (finely chopped)

- 2-3 garlic cloves (minced)

- 1-inch piece of ginger (grated)

- 2 green chilies (chopped)

- 1 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder (optional, for spiciness)

- Salt to taste

- 2 tablespoons oil (preferably mustard oil)

- Water as needed


Instructions:

1. Soak the bhatt dal or gahat dal in water for at least 4 hours or overnight. Drain the water before using.


2. In a pressure cooker, add the soaked dal along with 2 cups of water. Cook the dal until soft and mushy. Set it aside.


3. In a deep pan or kadhai, heat oil over medium heat. Add cumin seeds and let them splutter.


4. Add the chopped onions, minced garlic, grated ginger, and green chilies to the pan. Sauté until the onions turn golden brown.


5. Add the chopped spinach or fenugreek leaves to the pan and cook until they wilt down.


6. Once the leaves are cooked, add the cooked dal to the pan. Stir well to combine.


7. Add turmeric powder, red chili powder (if using), and salt to taste. Mix everything together.


8. Reduce the heat to low, cover the pan, and let the kafuli simmer for about 15-20 minutes, allowing the flavors to meld together.


9. Check the consistency and adjust by adding water if needed. Kafuli should have a thick, creamy consistency.


10. Serve hot Kafuli with steamed rice or roti.
