 Ragi drink, also known as ragi malt or ragi porridge, is a nutritious and wholesome beverage made with ragi flour (finger millet flour). It is a popular traditional drink in many parts of India and is known for its numerous health benefits. Here's a simple recipe to make ragi drink:


Ingredients:

- 1/4 cup ragi flour

- 2 cups water

- 1 cup milk (dairy milk or plant-based milk like almond milk)

- 1-2 tablespoons jaggery or sweetener of your choice (adjust to taste)

- 1/2 teaspoon cardamom powder

- A pinch of salt


Instructions:


1. In a mixing bowl, combine ragi flour and 1 cup of water. Mix well to ensure there are no lumps.


2. In a saucepan, heat the remaining 1 cup of water and bring it to a boil.


3. Gradually pour the ragi-water mixture into the boiling water while stirring continuously to avoid lumps.


4. Reduce the heat to low and simmer the mixture for 5-7 minutes, stirring occasionally. This helps cook the ragi flour and thicken the drink.


5. Add milk to the mixture and continue to simmer for another 3-4 minutes, stirring occasionally.


6. Add jaggery or sweetener of your choice, cardamom powder, and a pinch of salt. Stir well until the jaggery or sweetener dissolves completely.


7. Remove from heat and let the ragi drink cool down a bit.


8. You can serve the ragi drink warm or chilled, according to your preference. If serving it chilled, refrigerate for a few hours before serving.


9. Before serving, you can strain the ragi drink through a fine mesh sieve to remove any coarse particles if desired.


10. Pour the ragi drink into glasses and garnish with a sprinkle of cardamom powder or chopped nuts (optional).
