Veggie Donut

Veggie donuts are a unique and creative twist on traditional donuts, incorporating vegetables into the dough or as fillings. Here's a recipe for veggie donuts with a savory and flavorful touch:

Ingredients:

For the dough:

- 2 cups all-purpose flour

- 1 cup grated zucchini or carrot (or a combination of both)

- 1 teaspoon baking powder

- ½ teaspoon baking soda

- ½ teaspoon salt

- ½ teaspoon garlic powder

- ½ teaspoon onion powder

- ¼ teaspoon black pepper

- 1 tablespoon nutritional yeast (optional, for added flavor)

- 1 cup buttermilk (or plant-based milk with 1 tablespoon lemon juice)

- 1 large egg (or substitute with flaxseed meal or applesauce for vegan option)

- 2 tablespoons melted butter or vegetable oil

For the glaze:

- 1 cup powdered sugar

- 2-3 tablespoons water or plant-based milk

- Optional: Food coloring or natural food dyes

Instructions:

1. Preheat your oven to 350°F (175°C). Grease a donut pan or line it with parchment paper.

2. In a large mixing bowl, combine the flour, grated vegetables, baking powder, baking soda, salt, garlic powder, onion powder, black pepper, and nutritional yeast (if using). Mix well to distribute the ingredients evenly.

3. In a separate bowl, whisk together the buttermilk, egg (or substitute), and melted butter or vegetable oil.

4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

5. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.

6. Bake in the preheated oven for about 12-15 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.

7. While the donuts are baking, prepare the glaze. In a bowl, whisk together the powdered sugar and water or plant-based milk until smooth. Add food coloring or natural dyes if desired.

8. Once the donuts have cooled slightly, remove them from the pan and dip the tops into the glaze. Alternatively, you can drizzle the glaze over the donuts using a spoon.

9. Place the glazed donuts on a wire rack or parchment paper to allow the glaze to set.

10. Optionally, you can sprinkle chopped herbs, grated cheese, or toasted sesame seeds on top for added flavor and presentation.

11. Serve the veggie donuts while still slightly warm and enjoy!

These veggie donuts can be a delightful and unexpected treat, perfect for those who enjoy exploring new flavors and incorporating vegetables into their baked goods. Feel free to experiment with different vegetables or spices to customize the recipe according to your preferences.
