Cajun Gumbo recipe

 

1. Cajun Gumbo Recipe:


Ingredients:

- 1/2 cup vegetable oil

- 1/2 cup all-purpose flour

- 1 onion, diced

- 1 green bell pepper, diced

- 2 celery stalks, diced

- 3 cloves of garlic, minced

- 1 pound smoked sausage, sliced

- 1 pound chicken (boneless, skinless), diced

- 1 pound shrimp, peeled and deveined

- 1 can (14.5 oz) diced tomatoes

- 4 cups chicken broth

- 1 tablespoon Cajun seasoning

- 1/2 teaspoon dried thyme

- Salt and pepper to taste

- Cooked rice for serving

- Chopped green onions for garnish


Instructions:

1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the flour and stir constantly to make a roux. Cook the roux until it reaches a dark brown color, stirring continuously to prevent burning. This process may take about 15-20 minutes.


2. Add the onion, bell pepper, celery, and garlic to the roux. Cook for about 5 minutes until the vegetables soften.


3. Add the smoked sausage and chicken to the pot. Cook for another 5 minutes, stirring occasionally.


4. Pour in the diced tomatoes and chicken broth. Stir well to combine.


5. Add the Cajun seasoning, dried thyme, salt, and pepper. Stir to incorporate the seasonings.


6. Bring the gumbo to a boil, then reduce the heat to low. Simmer for about 30 minutes, allowing the flavors to meld together.


7. Add the shrimp to the pot and cook for an additional 5 minutes until they turn pink and are cooked through.


8. Adjust the seasoning with salt and pepper if needed.


9. Serve the gumbo over cooked rice. Garnish with chopped green onions.


2. Creole Gumbo Recipe:


Ingredients:

- 1/2 cup vegetable oil

- 1/2 cup all-purpose flour

- 1 onion, diced

- 1 green bell pepper, diced

- 2 celery stalks, diced

- 3 cloves of garlic, minced

- 1 pound smoked sausage, sliced

- 1 pound chicken (boneless, skinless), diced

- 1 pound shrimp, peeled and deveined

- 1 can (14.5 oz) diced tomatoes

- 4 cups chicken broth

- 1 tablespoon Creole seasoning

- 1/2 teaspoon dried thyme

- Salt and pepper to taste

- Cooked rice for serving

- Chopped green onions for garnish


Instructions:

Follow the same instructions as the Cajun Gumbo recipe, except replace the Cajun seasoning with Creole seasoning. Additionally, add the diced tomatoes to the pot along with the other vegetables.
