Zucchini Chocolate Cake:
Ingredients:
- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup chocolate chips (optional)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
3. In another bowl, beat the eggs. Add the buttermilk, vegetable oil, and vanilla extract. Mix well.
4. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Do not overmix.
5. Fold in the grated zucchini and chocolate chips (if using) into the batter.
6. Pour the batter into the prepared baking pan and spread it evenly.
7. Bake in the preheated oven for about 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
8. Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
9. Once cooled, you can frost the cake with your favorite frosting, such as chocolate ganache or cream cheese frosting. Alternatively, you can dust the cake with powdered sugar or serve it plain.
